Get ready for your new simple, tasty and filling breakfast staple of healthy Banana and Egg Pancakes!

Well, hello Breakfast!

Banana and Egg pancakes are a huge win for little people, are easily customizable plus healthy. A huge win of these pancakes is that as an adult it’s an actual filling pancake breakfast! 

I make these at least three times a week, if not more! Seriously, they are on my weekly meal plan every week! My kiddos love pancakes and I do too. But it can be a lot of sugar to start the day and my biggest issue is how hungry I am by midmorning. But not with these! No added sugar, lots of protein and super tasty! You can modify this recipe very easily to what you like best as well! 

The basic recipe (the amped up version I use is below) is as follows:

 Two eggs per one mashed banana 

That’s it. 

Want more-simply double it! Mix them together and cook like a normal pancake. The texture is different, of course, but so tasty and healthy!

What I like to do is add some things in! I add in a splash of milk, salt, vanilla, baking powder and flour. Jump to the recipe. 

The salt and vanilla for flavor and the milk to make it a bit thinner before adding my baking powder/flour.

I always like knowing the texture of a new style of a pancake! Here it is!

I find that by adding just a bit of flour (½ cup is much less than the 2 cups I use when making homemade pancakes) it gives the pancake a much better structure and feels very similar to normal pancakes. The baking powder gives it better lift but you don’t have to use it-the eggs do that job as well. 

Throw in some add-ins! Blueberries, chocolate chips, cinnamon, nuts, strawberries or anything else that sounds good. I personally love to add either blueberries or mini chocolate chips.

By adding Flour you will find the “fluffiness” of the pancake to be more familiar

This is a great recipe to make your own. Change the flour amounts for different textures or add some applesauce for added flavor! Make it something you love. 

Never be afraid to make a recipe your own and experiment! After all, it’s you who is going to be eating the food you make!

Equipment

  • Griddle or anything you like to cook pancakes on
  • Mixing Bowl
  • Spatula
  • Fork

Ingredients

  • 4 Eggs
  • 2 Bananas Mashed
  • 1/2 cup Flour use any flour of choice
  • 1 tsp Baking Powder
  • 1 pinch Salt
  • 1/2 tsp Vanilla
  • 1 tbsp Milk add more if needed
  • Chocolate Chips, blueberries, cinnamon ect. Any add ins you want!

Instructions

  • Heat griddle to medium heat
  • Mash Bananas well
  • Add in eggs and mix
  • Add in vanilla and milk. Mix well.
  • Whisk flour, baking powder and salt together.
  • Add flour mixture to wet ingredients and mix till just combined.
  • Add in any additional ingredients you want and stir to combine.
  • Cook first side of pancakes till the top have bubbles starting to pop
  • Flip and cook for an additional 2 minutes or until cooked through

Notes

  • You can use any ripeness of Banana you want! The riper the stronger the banana flavor will be. 
  • Because of the difference sizes that eggs and bananas can be its great to start with a tester pancake. Too flat-add a spoonful of more flour! Too thick-add an additional splash of milk.
